Shepherd’s Pie
Introduction
Shepherd’s pie made using soya mince.

Serves 4 – 6
Ingredients
- 750g peeled potatoes
- 75g margarine
- 1-2 tbsp skimmed or soya milk
- 1 chopped large onion
- 2 thinly sliced carrots
- 250g soya mince
- 2 tbsp light soy sauce
- 300 ml vegetable stock
- (Adding 100g mixed sweet corn and peas can make a tasty alternative)
Method
- Cook the potatoes in boiling water for 20 minutes or until quite soft, then drain well and mash with 50g margarine and enough milk to make a firm but smooth consistency
- Melt the remaining margarine in a frying pan and add the onion and carrots. Cover with a lid and cook for about 10 minutes or until soft, stirring occasionally

- Add the vegetarian mince, shoyu/ light soy sauce and vegetable stock.
- Bring to the boil and simmer gently, uncovered, for 8-10 minutes
