Easy cheesy muffins

Makes: 6 muffins. Prep time: 5 minutes. Cooking time: 25 minutes. Try serving spread with cream cheese. These muffins are also delicious when made with feta cheese and sun-dried tomatoes.

Ingredients

  • 300g self raising flour
  • 2 tsp medium curry powder
  • 100 ml olive oil
  • 200g cherry tomatoes, finely chopped
  • 100g mature Cheddar vegetarian cheese, finely grated
  • 250 ml full fat milk or soya milk
  • 2 medium free-range eggs, lightly beaten
  • Method

    1. Heat oven to Gas Mark 5 / 190C /375F
    2. Sieve the flour and curry powder into a large bowl.
    3. Add the remaining ingredients and stir well.
    4. Lightly grease the muffin tin with oil or line with muffin cases. Divide the mixture into each hole/case.
    5. Bake for 20 – 25 minutes.
    6. Leave to cool in the tin for 5 minutes then remove and place on a cooling rack.

    Try serving spread with cream cheese. These muffins are also delicious when made with feta cheese and sun-dried tomatoes.
